New Dawn

New Dawn is a one night only event, celebrating our partnership with Ryan Chetiyawardana, one of the world’s leading drinks experts.

The event is named after the first drink that will be served the night. ‘New Dawn’ is a very special Rum made in the Caribbean and delivered on a boat called the Tres Hombres which Silo chef Douglas McMaster lovingly refers to as The Pirate ship.

Silo has recently undergone a refurbishment introducing a new bar, fully equipped to bring Ryan’s visionary cocktails to life.

‘New Dawn will blur the lines between food and drink and marks the fresh wave of our restaurant in Brighton,’ says McMaster.

Claw and Craft

The Urchin – a laid-back Hove boozer offering finger-licking shellfish and more than 100 craft beers from around the world – is the place to head if you want to find out more about pairing beer with seafood.

Claw and Craft invites you for a stunning five-course tasting menu, plus five beers hand-picked by the team to pair beautifully with each dish. Just check out this menu:

Brighton Gin dessert bar

What are Friday afternoons for if not cocktails and dessert? Isaac Bartlett-Copeland and his crew invite you to their North Laine restaurant on the 6th and 13th October for an indulgent afternoon to kick off the weekend. Two Brighton Gin cocktails and three desserts, all inspired – as always – by local produce, much of it foraged or homegrown.

Menu details won’t be finalised until nearer the date – Isaac works with the freshest ingredients available to build the best flavours, rather than planning too far ahead – but plans include a sorbet, a Brighton Gin-infused dessert and petits fours, all presented in Isaac’s classic style – beautiful, precise and delicious.

So make a diary note to switch off that laptop on the 6th or 13th. Book a table, grab a friend and get some gin down your Gregory!

Cheese and beer: pushing the boundaries of the board

Join Patrick McGuigan at the Brighton Beer Dispensary on a voyage of discovery, as we push the boundaries of cheese and beer matching with daring accompaniments by Dizzy Gull. This will be a chutney-free zone.

Food journalist and OctoberBest co-founder Patrick McGuigan is one of the country’s leading cheese writers and a senior judge at the World Cheese Awards. He also runs the London Cheese Project festival.

The Brighton Beer Dispensary is a marvel of a pub serving a revolving line up of some of the country’s best craft beers, plus food with attitude by the Dizzy Gull – the sister kitchen to The Set restaurant.

Put it all together, and you have everything you need for a gloriously gooey and boozy (goozy?) evening.

Knife with Tim Hayward

Tim Hayward is a 3-times winner of the Guild of Food Writers’ Food Journalist of the Year. He writes regularly for The FT and has appeared on Great British Menu and Radio 4’s The Kitchen Cabinet and The Food Programme. But Tim knows the restaurant world from both sides – he is also the proprietor of Fitzbillies, a ninety-year-old bakery and restaurant in Cambridge.

Tim is the author of three books and his talk and demo will centre around his latest Knife, a love-letter to this essential culinary tool – its form, history and creation. This is a great chance to hear from someone who knows the industry inside-out. There will also be the opportunity to buy a copy of Knife and get it signed by Tim on the night.
